Mini Pancake Muffins Recipe



1 loving cup all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 loving cup milk
1 Tablespoon lemon juice
1 large egg
2 Tablespoons vegetable oil
1 teaspoons pure vanilla extract

  1. Preheat oven to 350 degrees F.
  2. Grease a mini muffin pan amongst a non-stick baking spray or butter (I used butter). Set aside.
  3. Prepare toppings past times placing them inwards pocket-size bowls.
  4. In a large mixing bowl, whisk together the dry out ingredients (flour, sugar, baking powder, baking soda together with salt).
  5. In a large mensuration cup, whisk together milk together with lemon juice. Let stand upward ii to three minutes until the milk sours. Add egg, vanilla together with crude oil together with whisk together.
  6. Add the moisture ingredients to the dry out ingredients together with stir together only until combined. Slightly lumpy batter is okay. Do non overmix!
  7. Place i tablespoon inwards each muffin cup. Top amongst desired toppings.
  8. Bake for x to 12 minutes or until the tops are puffed upward together with set.
  9. Cool muffins inwards the pan for x minutes, withdraw from the pan.
  10. Serve or pack into ziploc bags or containers amongst lids for an slowly on-the-go snack.
